Fermented Okra is one of our most sour fermented vegetables. Okra has a lot of natural sugars and this equates to a strong ferment: crisp and sour. You will notice that all of our ferments have a beneficial bacteria ring at the bottom of the jar, the fermented okra will have a thick layer and might also have streaks of white silty bacteria on the vegetable. This is natural and the sign of a good ferment.
