Our Purple Sauerkraut, or ‘the Perp’ as we call it, is our most basic sauerkraut. Nothing but purple cabbage and salt goes in this one. For those looking for a plain sauerkraut this is the one. What the Perp has, however, is extra crunch. Purple cabbage is naturally more firm texture wise than green cabbage and that comes through in the ferment. Word of warning: this will turn everything you put it on a beautiful shade of purple!
